Q. I'm working with a carton of egg whites... trying to figure out how to boil one to two servings in water, then chop them in bits for egg salad. Microwave or frying pan just not working for me so far. And it's hard to boil egg without the shell! I imagine some gross egg drop soup disaster. Just set an ovenproof cup or small bowl into a pot of boiling water...keep the water shallow so the water line is below the top of the cup or bowl. Then pour your egg whites out of the carton into the cup or bowl. When they have solidified, remove the cup or bowl, let the egg whites cool in the cup or the bowl and you can cut them up in the same and used them for your egg salad...
